The wine name: ¡OLÉ!

¡OLÉ! is an exclamation of excitement shouted out to show enthusiasm and encouragement. Of Latin origin, you can hear it during flamenco dances, sporting events and historically during bullfights. Now we use it to show the excitement you will get when drinking a glass of this crisp Chardonnay. So boldly shout ¡OLÉ! amigos!

Appellation: Central Coast

The Central Coast appellation is a wine region that spans the Southern San Francisco Bay to the northern part of Santa Barbara. This region has a characteristic warm mediterranean climate with some very cool evening periods affected by its mountain passes leading to the Pacific Ocean. This warm weather and fertile land let the vines mature slowly and impart the grapes with maximum flavors, sugars, acids and the necessary components that make up this beautiful Vino Vargas wine.

Grape Varietal: Chardonnay

Chardonnay is the classic white grape and wine originally from Burgandy France. Chardonnay is the grape used in the classic French Chablis and is one of the components of Champagne. In the US it grows well in warm to hot temperatures like the Central Coast and achieves the perfect sugar and acid content at maturity.

Source: Single vineyard

This wine is made from grapes that were harvested by hand at the break of day. The grapes come from a single vineyard to ensure maximum flavor, consistency and authenticity. The vineyard is located in the Hecker Pass area of Gilroy.

Clear and crisp with just a shade of yellow.

It has distinctive aromas of pineapple, green apples and peach.

Dry and crisp with some nice fruit flavors. Just a touch of vanilla and butter from the limited oak aging and no malo-lactic fermentation.

Barrel: New French Oak, 10%

¡OLÉ! Chardonnay was aged in wooden barrels for only one month and monitored closely to impart a 10% new French oak taste. This foundation gives the wine a luscious blend of spice, vanilla and slight butter.

This is a delicious wine to serve fruits and strong cheeses. It goes great with lighter red meats, poultry and cheese dishes.
